Description
Schwarz Differential Medium is a differential medium for separating brewing yeasts from wild yeasts.
Malt extract, yeast extract and peptone provide nutrients, while glucose and dextrin provide energy. Basic fuchsin stains yeast growth and sodium sulfite is reduced during the characteristic reaction.
The sample is streaked across the prepared plate and incubated at 36 ± 1°C for approximately 18–24 hours. Colony formation and appearance are assessed to differentiate the yeast populations.
