
Coliform testing
Coliforms are the workhorse hygiene indicator — rarely a hazard themselves, but the fastest signal that a process, a surface or a water supply has drifted out of control.

Coliforms are not a taxonomic group so much as a functional one — lactose-fermenting Enterobacteriaceae used as a proxy for hygiene and process control. Their value is not that they are dangerous but that they are abundant, easy to enumerate, and respond quickly when cleaning, pasteurisation or water treatment fails.
Because the result is a count rather than a presence/absence call, the method has to be quantitatively reliable across a wide range. A coliform count that is technically correct but poorly reproducible undermines the trend data that makes the indicator useful in the first place.
In many programmes coliforms are now read alongside or replaced by Enterobacteriaceae, which captures a broader group and is less prone to the definitional ambiguity coliforms carry. Where a customer specification names coliforms explicitly, however, the specified method is the one that has to be run regardless of which indicator is technically preferable.
