Your testing reality
Dairy plants handle a raw material that supports bacterial growth from the moment it leaves the animal. Raw milk quality sets the starting point, pasteurisation and processing have to bring counts down reliably, and post-process contamination from fillers, pipework and cold rooms decides whether the product reaches the end of its shelf life.
Listeria is the organism that shapes most dairy environmental programmes. It survives refrigeration, settles in drains and wet areas, and can reach soft cheese, yoghurt and desserts after heat treatment. Coliforms and Enterobacteriaceae show whether hygiene is under control, and yeasts and moulds are the usual cause of spoilage in cultured products.
Because milk residue is cooked onto surfaces during processing, hygiene checks need to see the breakdown products of ATP as well as ATP itself. That is where A3 hygiene monitoring earns its place alongside the micro lab.
