Total viable count measures the population of aerobic mesophilic organisms able to grow under defined conditions. It identifies no specific hazard. Its value is as a baseline: raw material quality, process hygiene, and the rate at which a product approaches the end of its shelf life all show up here before they show up anywhere else.
Because the count is definition-dependent — incubation temperature and time change the result — comparability rests entirely on running the method consistently. A TVC produced at 30 °C for 72 hours is not interchangeable with one produced at 37 °C for 48 hours, and specifications that omit the condition are a common source of dispute.
It is also the highest-volume test most laboratories run, which makes the economics of media preparation and plate reading material. Consistency and throughput matter more than sensitivity for this particular measure.
