Description
M17 Agar is a cultivation and enumeration medium for lactic streptococci in milk, yoghurt, cheese and starter cultures.
Peptones and yeast extract supply nutrients, lactose is fermentable and disodium glycerophosphate buffers the acid produced by lactic organisms while restricting many lactobacilli.
Samples and dilutions are plated and incubated under the conditions appropriate to the starter organism. Streptococcus thermophilus is commonly enumerated at approximately 37°C, while mesophilic lactococci may be incubated at 30°C.
